Madrid has no shortage of cocktail bars: hotel rooftops, speakeasies and bars where every drink comes with smoke and a five-minute speech. A Mexican cocktail bar in Madrid is something else: margaritas by the pitcher, mezcal served the way it’s drunk in Oaxaca, and a bar that keeps pace with the kitchen. You come for a drink and end up staying for dinner.

Primo sits at Carrera de San Jerónimo 32, two minutes’ walk from Puerta del Sol. Here’s what to drink, how to order it, and why it’s an easy first (or last) stop of the night in central Madrid.

Margaritas: seven ways to answer the same question

Start here. Primo Madrid has seven margaritas on the menu:

  • Classic margarita, straight up or frozen: tequila, lime and triple sec. €10.50.
  • Mezcal margarita, with a smoky edge. €12.
  • Flavoured margarita: strawberry, passion fruit, mango or coconut. €11.
  • Spicy margarita, with chilli. €12.
  • Tommy’s: agave syrup instead of triple sec, cleaner and more tequila-forward. €12.
  • Premium margarita with Patrón, Don Julio and friends. From €15.
  • The 1.4-litre pitcher for the whole table. €50.

Tip: if there are four or more of you, get the pitcher. Better value, and the whole table starts at once.

Signature cocktails

Six house cocktails, each with its own name and story: the Buen Pirata (the house cocktail, €14), Artista Libre, Spiced Mojito, Llave del Viaje, Mezcálico and Umeshu Garden (€12 each). Ask the bartenders what’s in each one: they’ll happily steer you towards the right one.

Classics, with a Mexican accent

Playing it safe? Classics are €12: paloma (tequila, grapefruit and soda, one of Mexico’s favourite drinks), mojito, Primo Spritz, Margarita de la Muerte, caipirinha, piña colada, moscow mule and espresso martini. Beer lovers should try a michelada (€8.50) or a chelada (€7): Mexican beer with lime and salt, perfect with anything spicy.

Mezcal and tequila, for sipping

The agave shelf includes mezcals such as Ojo de Tigre, 7 Misterios, Montelobos and Unión Ensamble, and tequilas like Don Julio Blanco, Patrón Silver, Herradura Reposado and Clase Azul Reposado, served in 4 cl pours from €4 to €26.

Can’t decide? Order the Agavera (€15): one tequila, one mezcal, one raicilla and one sotol, side by side. Ask for it about 20 minutes ahead, as it’s prepared with care.

And to close the night, a carajillo mexicano (€8): iced coffee with liqueur, the classic Mexican after-dinner drink.
